Responsibilities

JOB DESCRIPTION:

 

Reporting to the Executive Chef, the Pastry Chef is responsible for consistently providing our guests with an experience expected of a high end multi-venue casino food service experience. Food quality is paramount and must be constantly exceeding our guests’ expectations.

Working in conjunction with our Executive Chef, Executive Sous Chef, and Restaurant Chefs, the Pastry Chef helps to lead our food service program to continuously elevate the property as the premier high end local casino gaming destination in the area. The property is one of the busiest casinos in the U.S and continues to grow each year. The Pastry Chef leads a team of dedicated culinarians who continue to elevate our guests experience and continue to keep them wanting more.

The guests that visit our property include all facets of our casino patronage including locals, elite and X Card members with many daily returning customers. A true passion for Culinary Excellence while driving unmatched guest satisfaction will be the foundation for this high profile position.

 

SERVICE INITIATIVE:

  • Create and ensure a fun-filled, entertaining and exciting environment with the five F’s - Fast, Fun, Friendly, Fresh and Focused
  • Treat Guests with a sense of caring and individuality while effectively identifying their specific needs
  • Inform Supervisor of Guest needs which may require special accommodations
  • Show special recognition of frequent Guests
  • Maintain a safe, clean and comfortable environment for Guests at all times
  • Consistently welcome Guests, thank them for their patronage, seek ways to make them comfortable and express the desire to have them return
  • Present a neat, clean and well-groomed appearance at all times
  • Maintain constant awareness of services, promotions, and events offered at the facility and inform Guests
  • Handle Team Member and Guest concerns/dissatisfaction and disputes timely and professionally to the Team Member/Guest satisfaction, while maintaining financial responsibility
  • Promote positive public relations and create an enjoyable atmosphere for all
  • Inspect and ensure a clean, safe working environment, notify appropriate departments to handle deficient situations
  • Maintain a professional and positive relationship with vendors, Guests and co-workers
  • Create a work environment that is safe, professional, friendly and conducive to a high level of morale, productivity and performance
  • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures
  • Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discretely notifying appropriate management of concerns
  • Ensure prompt and discrete notification to management and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Directly communicates with all supervisors, chefs and line employees on a daily basis regarding requirements and expectations.
  • Institutes cost control procedures and standards of performance.
  • Counsels, guides, trains, and instructs assigned personnel in the proper performance of their duties.
  • Develops and implements operating standards where necessary.
  • Provides project leadership and project management as assigned.
  • Responsible for creation, planning and supervision of the production of top quality pastries, desserts and baked goods in a cost effective, safe manner.
  • Ensures health and sanitation standards are met.
  • Assist other line employees with daily responsibilities.
  • Responsible for daily production and supervision of the pastry shops hourly & salaried staff ensuring that recipes and standards are followed and high food quantity is prepared, while safety standards and regulations are enforced.
  • Must be able to maintain payroll/productivity within budgeted guidelines for new desserts/pastry/bread products for all outlets and banquets
  • Will be required to create and recommend menu changes to the Executive Chef and Executive Sous Chef.
  • Supervises daily cleaning, conducts inventory of walk-in boxes and other duties such as special orders, buffet presentations and specialty menus or promotions.

Qualifications

QUALIFICATIONS:

  • Culinary Degree required with a proven track record in Pastry arts
  • Five (5) or more years pastry cook/baker experience with at least one (3) years experience required in Pastry leadership within the hospitality industry
  • Minimum three (3) years experience is required in a high volume hotel/resort
  • Must have experience in pastries, as well as strong grasp of current trends and presentations
  • Creativity with baked goods and bread production is necessary
  • Management skills are required as well as oral and communication skills
  • Proven experience working in an extremely fast paced environment with multiple functions happening simultaneously required
  • Must be able to analyze Food and Beverage data
  • Must have been able to produce chocolate and sugar show pieces
  • Must be able to demonstrate and deliver a high level of service to our guests
  • Must have strong verbal and written communication skills
  • Must have ability to lead and develop a cohesive culinary team
  • Must have strong administrative skills and computer skills
  • Able to interface effectively with FOH staff to produce a positive guest experience

  • May be exposed to casino related environmental factors including, but not limited to, second hand smoke and excessive noise.
  • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, and talk or hear.  Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.The work environment characteristics described here are representative of those an employee encounters while performing the essential functions of this job.
  • The Casino environment is hectic, fast-paced and often crowded and noisy. May be exposed to casino related environmental factors including, but not limited to, second hand smoke, excessive noise and constant exposure to general public.
