    Seminole Hard Rock Hotel & Casino in Hollywood, Florida, located minutes from Fort Lauderdale's world-famous beach, features a AAA Four Diamond resort with 469 luxury rooms and suites, over 100 tables, 2000 slot machines, award-winning restaurants, high-energy nightlife, a lagoon-style pool and Beach Club, a Hard Rock-inspired spa, and premium meeting and convention space. The property is currently undergoing a $1.5 million expansion. When the development is complete in mid-2019, Seminole Hard Rock will be home to an iconic guitar hotel tower that will include a Hard Rock Casino, nearly doubling its current size with 3,267 slot machines, 178 table games plus a new 18,000-square-foot poker room. The existing Hard Rock Live arena will be razed in March 2018, and replaced with a state-of-the-art 7,000-seat Hard Rock Live venue in a theater-style configuration.     Under the direction of the Asst. Manager - Steward, the incumbent is responsible for supervising and directing the kitchen stewards. They will work closely with the Chef and all Food and Beverage employees. Responsible for maintaining control over kitchen equipment, assuring proper cleaning and storage.

    Essential Job Functions:

    • Communicates with management to ensure dish, glassware, silverware, etc. are stocked accordingly.
    • Responsible for foodborne clean up according to biohazard protocol.
    • Performance assigning duties (feeding, catching, running, sweeping and/or mopping floor empty trash and doing deep cleaning, etc.)
    • Washes, cleans and polishes equipment to ensure it is ready for use; sorts and cleans dish, silverware, glassware, utensils and ashtrays.
    • Cleans designated equipment, sinks refrigerators/freezers, service areas, walls, floors, kitchen, cafeteria, dumpster, compactor areas as assigned, following all sanitation requirements.
    • Cleans all stoves in assigned area, including tops of stoves and ovens.
    • Cleans all grills, flat tops, hood units and all gas pipes connected to stoves and under all units
    • Cleans around the stove area after completion.
    • Uses cleaning chemicals and personal safety gear.
    • Cleans grills, floors, walls, pots, dishes or other ware as needed
    • Cleans and dries all refrigeration units in stove area
    • Cleans spills in kitchen and work areas immediately.
    • Uses designated chemicals, supplies and equipment to clean various floor surfaces (brooms, mops, stripper, buffer, etc.)
    • Cleans and transports mats to the loading dock.
    • Cleans garbage compactor and area as assigned.
    • Reports any damages, maintenance problems or safety hazards to the Manager.
    • Overall works to ensure cleanliness and detail of the kitchen facilities, walls, ceiling, including AC vents, tiles, light fixtures, stoves, grills, griddle, ovens and all kitchen equipment.
    • May perform duties as a kitchen worker and stove cleaner and utility porter as needed.
    • Uses correct cleaning chemicals for designated items, according to OSHA regulations and hotel requirements.
    • Maintains cleanliness and working condition of garbage disposal and grease traps
    • Maintains cleanliness and organization of work areas throughout shift
    • Stocks kitchen lines, restaurant service areas and buffet line with designated cleaned wares, utensils and equipment.
    • Stores cleaned equipment in designated areas.
    • Checks the working condition of equipment and machinery in accordance with specifications.
    • Handles all wares carefully to prevent breakage and loss.
    • Fills in and assists other employees within the department.
    • Responsible to schedule breaks for all employees.
    • Covers breaks for all stations.
    • Is prompt, present, and prepared for all scheduled shifts.
    • Performs other duties as assigned.


    High school diploma or equivalent and related experience are preferred. A minimum of one (1) year of experience in kitchen operations.


    Additional Requirements:

    • Has working knowledge of sanitation regulations and procedures.
    • Able to stand for an extended period of time.

    • May be exposed to casino related environmental factors including, but not limited to, second hand smoke and excessive noise.
    • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.

    • The Casino environment is hectic, fast-paced and often crowded and noisy. May be exposed to casino related environmental factors including, but not limited to, second hand smoke, excessive noise and constant exposure to general public.
